Here at Premier Estates Wine, the team have all been commenting on the chilly mornings and darker evenings. They've been discussing their slow cooker comfort food recipes and how they love to cook with wine to add something special to the flavours of a satisfying meal. We thought it would be nice to share them with our customers, so here goes: 

Prosecco Rissotto

To make this dish you need:

3 Shallots      3 Garlic cloves      1 Knob of butter      1.25 cup of Risotto Rice

3 cups of chicken stock      1 Block of Parmesan cheese

1 Pack of pancetta Thyme      1 Lemon      1 cup of Prosecco

Beef and Shiraz Red Wine Hotpot

Veg or sunflower oil, for frying      1½ kg stewing steak cut into cubes

3 tbsp flour      3 medium onions      500g carrots      4 garlic cloves

1 medium glass of Premier Estates Shiraz red wine      850ml beef stock

3 bay leaves     3 thyme sprigs      serve with jacket spuds or mash

The Method

Heat 1 tbsp of oil in a large frying pan. Add the beef in a bowl, sprinkle with the flour and seasoning, then mix until well coated. Fry in batches, add more oil if required, until all is well browned. Pop in a casserole dish when fried.

Add another tbsp of oil to the pan and add in the onions and carrots, sliced. Cover and cook on a low heat for 10-12 mins until nicely soft, then remove the cover and cook until it's starting to brown. Add the garlic, crushed and cook for another minute. Pour in the wine and stir, letting it boil up for a minute, then pour over the meat. Add stock, bay leaves and thyme then cover and gently simmer for 2½ hrs until the beef is tender.
